As we are coming to the end of Nutrition week, here are a few insights to nutrition and your eyes.

Did you know your eyes have the incredible ability to change light into electricity?

That’s true! We receive images in the form of light energy. As our brain can only process electrical energy – we need our eyes to convert light into electricity.  How amazing is that?

We all know that our parents and grandparents always told us to eat carrots to ensure we have good vision.

In the body Beta- carotene changes to vitamin A which is an excellent anti-oxidant that helps work away toxins and harmful by products in our cells. Not only does it help protect us against cancer – but it also plays a vital role in the process of sight. Vitamin A is needed for the magical vision process when light is changed to electricity. The good news is that many other vegetables carry high levels of beta-carotene – think sweet potatoes, spinach, cabbage and butternut squash.

Vitamin D helps reduce inflammation and in the eye it reduces macular degeneration that is caused by early aging of the cells that’s needed for seeing detail and colour. When focusing on your nutrition–thinks salmon, sardines, mackerel, milk and orange juice fortified with vitamin D  Zinc supports vitamin A to reduce the risk of night blindness. Sources of zinc is beef, lamb, sesame and pumpkin seeds, lentils and cashew nuts.

Omega-3 Fatty Acids help prevent macular degeneration (AMD) and dry eyes.Fish such as salmon, mackerel and herring; fish oil supplements, freshly ground flaxseeds, walnuts.

Lutein and Zeaxanthin help to prevent cataracts and macular degeneration. Think green leafy vegetables.

Vitamin C helps to reduce the risk of cataracts and macular degeneration. Sweet peppers (red or green), strawberries, broccoli, oranges and cantaloupe.

Vitamin E combined with carotenoids (Vit A) and vitamin C, may reduce the risk of advanced AMD. Almonds, sunflower seeds, hazelnuts.
